When I first made this dessert I COULD NOT BELIEVE that a chocolate mousse this good was actually good for me. I also couldn’t believe how super easy it was to make. It takes some chill time in the fridge but trust me it is well worth the wait!


Serves 2-3

1 can of full fat coconut milk – organic preferably
2-3 tablespoons raw cacao powder
1 tablespoon of raw honey or pinch of stevia to taste
1/4 teaspoon vanilla extract
Sprinkle of cacao nibs (optional)


Place the can of coconut milk in the refrigerator for a few hours or preferably overnight so the cream hardens and is easier to scoop out. Scoop out the cream into a large mixing bowl. Using a hand mixer on medium speed mix in then ingredients slowly. Taste and make sure desired sweetness is achieved. If not add a tad more raw honey or stevia. Place mixture in glass serving dishes and refrigerate for 4 hours or preferably overnight. Sprinkle with cacao nibs before serving.
