This super easy, insanely delicious cinnamon baked sweet potato dish is perfect for my fellow sweet “toothers”. The natural sweetness of the sweet potato and the sprinkle of cinnamon with crush those sugar cravings.

Packed with healthy fats and vitamin A, your body will thank you almost as much as your taste buds do.

 

Serves 2

2 organic sweet potatoes
1 ½ tablespoons of coconut oil or grass fed butter
Cinnamon to taste
Pink Himalayan crystal salt to taste

Either peel sweet potatoes and cube or just wash well, cut of any spots, poke with fork and bake with skin on. Place sweet potatoes in a tin foil lined baking dish and bake on 400 degrees Fahrenheit for approximately 45-60 minutes or until soft.

Remove sweet potatoes from over and let cool for 10 minutes. If cubed simply spread coconut oil or grass fed butter over potatoes and sprinkle with cinnamon and pink Himalayan salt or cut open potatoes and follow the same instructions with oil/butter, salt and cinnamon.

Eat while warm and enjoy guilt free!
