Cauliflower Rice. Wow! Why didn’t I know about this sooner? I could have saved myself a lot of bloating over the years ;). I dare you to make this for your family and see if they can tell the difference?


Serves 2



1 head cauliflower

4 tablespoons olive oil

1 clove garlic, minced (optional)

3 threads saffron (optional)

Himalayan pink salt and pepper to taste (optional)


Chop the cauliflower into florets, and steam the cauliflower until tender, for about 10 minutes. Drain and place in food processor with optional garlic and saffron, process slowly drizzling in oil until it reaches a rice-like consistency. Season with Himalayan pink salt and pepper and serve.

You can also do this raw if raw cauliflower doesn’t bother your stomach.
