Black bean brownies are the answer to the world’s problems. Okayyyy maybe not but they are certainly the answer if you want to enjoy a yummy dessert guilt free.  I love brownies, mainly because of the texture and of course the chocolatey taste.  But the flour (gluten) in regular brownies is something I try and stay away from.. it just does not do a “gut good”!

I first tried these brownies during a bake sale at my daughter’s school.  I was super impressed! So I stalked down.. I mean found ;).. the parent who made them and she was sweet enough to share her recipe.  So now I am sharing with you.  Test em out and let me know what you think in the comment box below.

Ingredients

  • 1 1/2 cups black beans – drained and rinsed
  • 1/2 cup gluten free quick oats
  • 1/4 tsp Himalayan pink salt
  • 2 tbsp cocoa powder
  • 1 tsp cacao powder
  • 2/3 cup chocolate chips
  • ½ cup pure maple syrup
  • 1/4 cup organic virgin coconut oil
  • 2 tsp pure vanilla extract
  • 1/2 tsp baking powder

Directions

Preheat oven to 350 F. Grease an 8×8 pan and set that aside. Blend all ingredients except for the chocolate chips in a food processor until smooth. Mix in the chocolate chips. Once mixed pour brownie mixture into the previously greased pan. Pop in the oven for 16 to 18 minutes. I like to refrigerate my brownies for a few hours to overnight for a firmer texture. Cut into squares and serve. Enjoy 🙂
