Ginger and date snack bites are one of my favourite go to snack when I want something filling and a little bit sweet! What makes these bites so awesome is they are no bake! I don’t know about you but if I don’t have to turn on the oven then thats a hugggge plus ;). Dates are natures sweetener. I throw them in smoothies, in oatmeal and in delicious snacks like these bites to get that sweetness without the junk. These bites are packed with protein and healthy fats to give you that pick me up and leave you satisfied!
Makes Approx. 20 bites
- 2 cups raw unsalted organic almonds
- 1 cup Medjool dates
- 1 tsp fresh minced ginger
- Organic Shredded coconut
- 2 tbsp raw honey
- 1 tsp organic vanilla extract
- 1 tsp ground allspice
- ¼ tsp Himalayan pink salt
Mix all ingredients in a food processor (preferably) or high speed blender on low until dough is smooth. Wet hands so dough does not stick and roll approx. 1 inch balls. Finally roll balls in a thin layer of shredded coconut until covered. For firmer snack bites refrigerate for a few hours before serving. Separate bites with parchment paper to avoid sticking while they are stored. Enjoy!!
