Helllllllllooooo Fall! Fall is without a doubt my favourite season. The leaves changing, the sweaters, Halloween and best of all… drumroll.. Pumpkin goodies! Mmm! I honestly can’t get enough pumpkin goodness during fall. But a lot of pumpkin goodies are loaded with artificial flavouring and tons of added sugar. We want to avoid these unnecessary additives! Many of them taste like a really bad pumpkin flavoured candy. YUK! That’s why I have shared with you one of the simplest pumpkin dishes you can make. Perfect for breakfast or dessert! Pumpkin Spice Chia Pudding! And loaded with beta-carotene, vitamin C and fiber this is not only a tasty dish but a super healthy one as well :). Ingredients
- 1/4 cup chia seeds
- 1 1/2 cups unsweetened almond milk or coconut milk
- 1/2 cup pumpkin puree
- 1 teaspoon organic cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon ground ginger
- dash of allspice
- 2 tbsp pure maple syrup (optional)
Mix all ingredients in a bowl or glass jar. Freeze at least 3 to 4 hours to overnight until firm. Sprinkle the top with a little cinnamon. Serve and enjoy :).
